Fiesta + Daddy-OLE’s Salsa

Oh how the days of celebrating cinco de mayo have changed… I have fond memories of hours on end spent over big beers at El Toro and queso at Rio Bravo.  This year we’re having baked churros,  walking tacos and all the fixin’s.  The wildest we’ll get is dumping the smarties out of our mini pinatas.  I wouldn’t trade it for the world :-)

I had everything on the table already other than the little pinatas.  I carried them all over Target hemming and hawing over whether or not to spend the few dollars to get them.  It’s a real problem that I have.  Honey says I try to pinch a penny in all the wrong places.  ha!

It’s been eons since I made the salsa that used to be a staple in our home.  Honey was literally giddy when he came home to find it!!!  It’s SOOOO good!  So good, in fact, that we have guarded the recipe with our lives for the last twenty years.  But, what’s the point of being a blogger if you aren’t going to share your family secrets?!

Daddy-OLE’s Homemade Salsa

1 large can whole tomatoes
1 regular sized can tomato sauce
1 can green chilis
4-5 green onions (remove roots and last few inches of green)
1 clove garlic
1/2 bunch cilantro (tough stems removed)

Throw everything in a food processor or blender and mix well. Leave slightly chunky!

My fave fiesta dessert are baked churros.  They are SUPER easy and yummy!!

Baked Churros
1 sheet of frozen puff pastry dough, frozen
1/4 c sugar
1 tsp cinnamon
1/4 c melted butter

Preheat oven to 450.  Unfold and cut pastry sheet in half length wise, and cut each half crosswise into 6 strips.  Place on lightly greased parchment paper lined baking sheet.  Bake 10 minutes or until golden brown.  Meanwhile, combine sugar and cinnamon.  Remove pastry from oven and dip in butter.  Roll in cinnamon sugar mixture.

I was just telling Honey how happy I am that we have a “cinco de seis” party to attend.  His reply?  “I’m shocked we aren’t celebrating Revenge of the 6th.”  SCREEEEEEECH.  Stop what you’re doing and tell me right this instant what your talking about.

How have I not heard of this before???????????  So fun!!

  1. So fun & festive! I make a very similar salsa except I use a can of Rotel instead of the can of tomato sauce & can of green chiles & I add 1 tablespoon of Lawry’s garlic salt. I want to try your version, too.

  2. Cracking up about your pinata dilemma – I am completely the same! No problem spending money on the big things, but then I walk around Target in a stress about buying the $3 hand lotion…

  4. Our secret salsa uses fire roasted diced tomatoes, rotel, 1/2 small onion, bunch cilantro and a dash of cumin! I add sliced jalapeños to the blender also! I make it weekly around here!
