Sunday Supper {White Wine Chicken + Twice Baked Potato Casserole}

Happy Sunday, y’all!  It’s been a good long while since I had a Sunday Supper.  When I posted this pic on Instagram, loads of y’all wanted to know about the potato recipe.  It’s SO good!!  It does take some time, but it is great for a crowd (it’s filling and rich) and is a staple on every holiday table around here.

The chicken is SUPER easy and quite yummy and makes a great school night supper as well.

Nicole’s White Wine Chicken

4-8 chicken breasts (I use 8 small pieces to have leftovers)
1 cup white wine (I use Trader Joe’s)
1 can cream of mushroom soup
1 can french onion soup

Spray crock pot with cooking spray.  Put in chicken pieces.  Pour in everything else.  Cook on low 6-8 hours.

Note: I have also made with frozen chicken breasts and it works just fine!

Marme’s Twice Baked Potato Casserole

8 medium sized baking potatoes (about 5 lbs), baked until soft
2 cups shredded cheddar cheese, divided
16 oz sour cream
8 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup butter, melted
2 garlic cloves, minced
1T. fresh chives, chopped
1 1/2 tsp salt
1/2 tsp pepper
6 bacon slices, cooked and crumbled
4 green onions, chopped
1/4 cup fresh chives, chopped

  1. Cut baked and slightly cooled potatoes in half length wise.  Scoop out pulp and coarsely mash.
  2. Stir in 1 cup cheddar cheese and next 8 ingredients.
  3. Spoon into lightly greased 13×9″ baking dish.
  4. Bake at 350 for 30 minutes until thoroughly heated.  Sprinkle with remaining 1 cup cheese, bacon, green onions and chives and return to oven for 5 minutes, or until cheese is melted.

Note:  Mother puts everything in step 2 in her kitchenaid mixer and uses that to get it all thoroughly combined.  Also, I have substituted milk for the heavy cream and its really not as good.  :-)  Mother would never do that and is probably cringing right now.

You can see the rest of my table setting in this post!  I put it out for Easter, but we left it up for about a week after.

Things will kick into high gear around here from tomorrow straight through Memorial Day with Whit’s first communion, the end of the school year, the end of 5th grade, our 15 year anniversary, Honey’s birthday, Bird’s birthday, CeeCee’s recital, a visit from my parents (fingers crossed) and so much more!  I’m really really excited for the fun ahead and am glad we had a bit of a breather this weekend before it all starts.

  1. Both recipes sound delicious! I make a similar version of the potato casserole often; I’ll have to give the chicken a go. Always looking for more crockpot recipes!

May is always so super busy, and yours looks to be jam packed! Ours started this past weekend, but luckily next Wednesday is our last day of classes. All good things! xo

  2. Thank you so much for posting Marme’s potato recipe. I cannot wait to try it!!! The chicken recipe also sounds interesting. Like the poster above, always looking for new crock pot recipes. Both dishes look yummy and your food presentation is always so great. Of course, to me, everything looks good on a Blue Willow plate :-) .

    Happy May Day to you!!

    1. Aw, thank you! Funny story – when we were getting married Honey said he thought my blue willow plates were “too busy to eat off of”. HAHAHAHA! I asked him if he’d really turn down a home cooked meal due to the plate and he said no. He’s managed to eat off blue willow for 15 years now :-)

  3. Thank you so much for sharing your mother’s recipe! It looked delicious and had caught my eye. Your Easter table was darling this year.

Have a wonderful week preparing for Whit’s sacred, special day…and keep getting better, Daddy-O! I’m off to Florida and Indiana (and will be heading to Kroger’s for the balsamic dressing since we don’t have them here.) When we were kids, we used to sing their theme song… so it looks like I’ll be “Krogering”! :-) Happy May, everyone!

    1. Thanks Jane! I hate grocery shopping anywhere other than the first store I shopped at when we moved here. I feel like I can’t find anything and it takes so long :-) I’ve been known to drive past one Publix to go out of my way just to shop at “mine” but that dressing is so good I now go “krogering”. HA!

  4. That casserole looks yumm! I tried your lasagna recipe and it’s delish!

FYI: I found bunch o balloons at Costco! 10 pack for $19 with a container! I remember seeing your one post about them and thought of you!
