Sunday Supper {Cheese Grits & Roasted Tomatoes}

So, to say I’m obsessed with this meal would be putting it lightly.  Mother made it down in Savannah and I’ve since whipped it up twice back home.  I served it once on it’s own as a veggie supper and a second time as a side with our favorite Barefoot Contessa flank steak

Cheese Grits and Roasted Tomatoes
From Southern Living May 2014
Serves 4

1/2 cup heavy cream
2T. butter
1c. uncooked stone ground yellow grits (I used quick grits since that’s what I have.  Same recipe, just cooks faster.)
2oz. cream cheese
1/4 c. grated extra sharp cheddar cheese
Roasted Tomatoes
garnish: fresh chives

1. Bring first 2 ingredients and 3 cups water to a boil.  Stir in grits and reduce heat to medium-low.  Cover and simmer, stirring until finished.
2. Whisk in cheeses and remove from heat.  Top with roasted tomatoes.

Roasted Tomatoes
Preheat oven to 400.  Toss 1lb. halved cherry tomatoes; 1 T. extra virgin olive oil; 1 T. red wine vinegar; 1 tsp. honey; 1/4 tsp salt and 1/4 tsp pepper in a baking dish.  Let stand 10 minutes.  Bake 18 mins or until tender.

Note: I used 2 pints of grape tomatoes and doubled the sauce mix because it’s SOOOO yummy.  I also needed to add about 5 mins to the cooking time.

I expect it will become a summer staple with all of the grape tomatoes we’re growing in the garden!!  Speaking of which, things are shaping up nicely this year…

  1. Do you think I could use tomatoes in place of the cherry tomatoes? I didn't plant a cherry tomato this year but I have a bunch of early girls!

  2. I can't wait to try this recipe. WE just returned from one fun week in the South and LOVE grits…. The recipe says to put in the first 3 ingredients and then to add the grits to the boiling water……..the grits are the 3rd ingredient…..should I add the cream cheese before the grits or after! Thanks!!!!

  3. What barefoot Contessa cookbook would you suggest purchasing? I have 3 littles under 7 to cook for haha and I am running mad with chicken nugget and oatmeal requests.
    Btw, we are on Wilmington island I see your mother all the time at Publix and just realized I had seen her before on your blog. Small world :)

  4. Kelly – I'm honestly not sure! I'm terrible at not following a recipe explicitly. I think it's worth a shot though :-)

    Ande – OK…fixed the instructions. The cream cheese goes in after. Bring the first 2 ingredients + the water to a boil. Then add grits. make sure to NOT get instant grits! Regular or quick will be fine. Quick grits will obviously cook much quicker (ie. 5 mins or so)

    KM – I love foolproof so much!! Although I can't wait for her new make ahead one to come out this year. It might be worth waiting for…esp with kids :-) How funny that you see her at the publix!!
