Rosemary Olive Oil Popcorn

My dear friend M watched the PCP for me one day over the break and I couldn’t help but smile when she reported, at ten a.m. mind you,  that the littles had already been ziplining, jumped on the trampoline and gobbled up a whole pot full of her rosemary olive oil stovetop popcorn.  And that’s precisely when the conversation screeched to a halt…. rosemary olive oil stovetop popcorn?  Do tell!

Well, I got the skinny and tried my hand at it that very night.  Of course, I was texting with her while I was in the process and before I knew it, I had burnt the first bath and my kitchen stunk to high heaven.  Let me be the first to tell y’all that texting and popping just don’t mix.  Not to be outdone, I put down the phone and started over.  The results were divine.  And totally worth the stench in my house for the next two days.  (I do not exaggerate.)

The B Family’s Stovetop Popcorn
1. Put 3T. olive oil + 3 single popcorn kernels in a large pot on medium heat on the stove with the top on.
2. When those kernels pop, you’ll know the oil is ready.  At that time, add 1/2 c popcorn kernels and cover.  Once the popcorn starts popping, you will want to shake the pot around on your stove to keep the popcorn on the bottom from burning.
3.  Just as soon as the popping stops/slows, immediately remove from the heat and pour into a large bowl.  Salt (liberally), pepper and toss with dried rosemary.  YUM!!!

I have since made countless pots of this stovetop popcorn, most of which occurred last week during snow no-show 2015 while we spent three entire days lounging around the house!  I even tried a version where I drizzled with melted butter and truffle oil… oh MY!

  1. Sounds so yummy! We could even make it on the grill I am sure. Nothing worse than that burnt popcorn smell, unless you have had a cookie cake catch the oven on fire :-0

  2. I do something similar, but with coconut oil- and then I read somewhere to put the seasoning you want into the oil while it is heating up and when you first dump the kernels in, and it will season the kernels. We use a lot of Jane's Crazy Salt or Slap Ya Mama– makes for delicious popcorn!!!!
