Sunday Supper {Bang Bang Shrimp + Fried Rice}

This is one of our favorite, lick the plate clean, kind of Sunday Suppers!  It’s quick and easy and not toooo bad for you to boot.  I found the recipe years ago and printed it out so I don’t have a source, sadly.  At any rate, I give you Bang Bang Shrimp + Fried Rice…

Fried Rice

3 cups cooked brown rice (best if cold, so you can cook the night before or morning of!)
1 egg + 2 egg whites
1 tbsp oil
1/2 onion chopped
2 cloves garlic minced
5 green onions
1/2 cup shredded carrots
1 cup shelled edamame
2 tbsp soy sauce
salt and fresh pepper

  • Whisk eggs, season with salt and pepper and scramble in a large pan or wok.  Set aside.
  • Add oil to your pan and cook onions, green onions, carrots and garlic for about a minute stirring constantly.
  • Add rice and cook until heated.
  • Add egg, soy sauce, and edamame, mixing well for about 3-4 minutes.
  • Season with salt and pepper to taste.

 

Bang Bang Shrimp Sauce

5 T mayonnaise
4T finely chopped green onions
3 T Thai Sweet Chili Sauce
1 t Sriracha (or less)

Mix mayo, onions, chili saue and sriracha and set aside.

Now to cook our shrimp, we usually buy the 1.5lb-ish size bag of froze, peeled and deveined shrimp at Publix.  Take tails off shrimp and saute in large pan with olive oil, butter and garlic.  It only takes a few minutes.  Season with salt and pepper.  We serve the sauce on the side because the littles only like a dab of it or none at all.  Honey and I slather our shrimp in the sauce because it’s SO good!

  1. Everyone here would loge this dish, even the sauce (well, I’d leave off the sauce but everyone else would love it). Fried rice is always a hit!

  2. Thanks for the recipe, but I wish you would do a PSA about using Wild Georgia Shrimp (or wild gulf/American shrimp). The stuff you buy at Publix is treated with all kinds of cleaning chemicals, antibiotics, and toxic fertilizers they use when raising it in a bathtub in Taiwan or someplace, lol. Since you are from Savannah like me, I am so surprised you would eat this or encourage people to do so. There is no comparison on taste either. If I can’t have wild shrimp, I’m not having it at all. That stuff is nasty for you. Come on girl, you know better! Xoxo- love your blog- seriously. Just had to give you a hard time about that one.

      1. Lol, I didn’t mean to gross you out- I thought everyone from the Lowcountry detested foreign shrimp. I didn’t mean to single Publix out – I just mean the non-wild shrimp. Friends don’t let friends eat imported shrimp :). Nothing like wild Georgia shrimp! I’m sure you can google it and get some good info. Again- thanks for the recipe. I will try it!

  3. This is one of my favorites from my childhood and my kids love it too.
    Western BBQ Baked Beans
    I lb hamburger, browned and drained.
    1/2 onion, cooked with hamburger
    I can Bush’s Baked Beans (any flavor)
    1 good squirt ketchup
    2-3 dashes whistershire
    (You can also add taco seasoning to give it a different flair)

    All of this can be cooked on top of the stove. Sometimes we add sour cream and shredded cheese as a garnish. Serve with a salad or corn.
    This is quick, easy and very yummy. One of our favs!!

  4. Saw this on your Lent Favorites this week – For the mayo does it need to be real mayo or will Miracle Whip work for this one?
