Perfecting Pancakes {40×41}

I realize that I am kind of alone here in my inability to make a pancake.  But, after nearly TWO years of trying more recipes, methods and techniques than I can count, I’ve finally mastered the art of pancake making!!

I tried a ton of boxed mixes and home made recipes in my quest, and finally settled on a super easy recipe that I am sure you will find all of the ingredients for in your pantry already.

Perfect Pancakes

  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray
  1. Heat large skillet over medium heat.  I do this first so that it is nice and hot!
  2. Combine milk with vinegar in a medium bowl and set aside for 5 minutes.
  3. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  4. Coat pan with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

It sounds almost silly to be so excited about this, but I LOVE being able to get up on Saturday mornings and enjoy a full blown breakfast with my peeps.  The littles rave about it so I’m feeling like a pretty accomplished mom :-)

Not to mention, this marks another one off the 40×41 bucket list!!!  I’ve got under two months to finish it up!

  1. Your pancakes look delicious. I was touched by your desire to fix them for your kids. My mom taught school, so breakfast was cereal during the week. But on Saturdays, we knew we would wake up to homemade pancakes. The only difference is Mom’s were always plate sized. I never saw a small pancake until I went off to college. Thanks for the memory.

    I use a similar recipe, only I don’t sour the milk and use only baking powder, no soda. And I’m pretty sure that’s why I can tell from the pictures yours are so much fluffier!

  4. I am one of 6 children and every Sunday for about 60 years my Dad made pancakes, bacon and sausage for breakfast after Mass. His pancakes were the best and lightest pancakes I have ever eaten. He always used Aunt Jemima pancake flour and followed the recipe, but the secret to his pancakes was adding Log Cabin syrup (probably any syrup would work) to the batter and then letting the batter rest for a few minutes. I’m not sure how much syrup he added but it was probably anywhere from a 1/2 cup – 1cup. Try it and I think you will like it. It also helps the pancakes brown evenly.

  5. I use a recipe out of Trisha Yearwood’s cookbook for Lemon-Blueberry pancakes. They always turn out fluffy and delicious.

  6. I just wanted to say you weren’t alone in an inability to make pancakes. We all love pancakes here but my children would rather have McDonalds pancakes than mine. Yuck! :) So this morning I am giving your recipe a try because I’d really like to eat pancakes at home sometime. And my 8 year son is going to help. :) He’s thrilled we are doing it from scratch.

  7. I’m kind of thankful that I can choose between Bisquick and Aunt Jemima Light and Fluffy pancakes. I’m too sleepy in the morning to measure ingredients!! :) I used to prefer the Aunt Jemima, but we started doing with the Ultimate or Melt in your mouth pancakes from the side of the Bisquick box, and I like those better. Glad you conquered your homemade pancakes!! They look delicious.

  8. Saw those delicious pancakes at 10 P.M. and just had to try them. You are so right. They are delicious! This time, I used self-rising flour and they were so good. Next time I will try the long version and see if any difference. Love your blog.
