Muddy Buddies

General Mills sent us a big box for Christmas with all of the things we needed to make a long-time holiday treat, Muddy Buddies.

The funny thing is that I used to make these all the time.  I guess they just fell off my radar, as recipes tend to do over time.  We bagged *most of*  them up and took them in to the front office staffs at our schools!

As for the rest, well we enjoyed those at home.  :-)

Muddy Buddies (Gluten Free)

9 cups Rice Chex
1 cup semi sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup butter
1 tsp vanilla
1 1/2 cups powdered sugar

  • Place cereal in large mixing bowl; set aside.
  • Place chocolate chips, peanut butter and butter uncovered into microwavable bowl. Microwave 1 minute on High. Stir.  Microwave about 30 seconds longer or until mixture can be stirred smooth; stir in vanilla.
  • Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.  (I split mine between two 1-gallon bags)
  • Pour powdered sugar into bag with cereal mixture. Seal bag. Shake until well coated. Spread on parchment paper to cool. Store in airtight container in refrigerator.

  1. While I make and give lots of Chex Mix over the holidays (using the original recipe from the 60’s), I have yet to try this version.
    It always looks yummy on the box.

  2. I made 5 batches of these this year and if I hadn’t gotten tired of baking, I was also making other goodies, would have made 6. Oldest son asked me when his second batch was coming!! lol I make one batch each for four of my grandsons with one batch for the son.
