I have loved following Edie over at Life in Grace for as long as I have followed blogs. She has such a huge heart, an eye for decorating and is awesome in the kitchen. Three things I love <3
I have been making her Cheeseburger Soup for winter dinners ever since she first shared it *almost* six years ago today. Everyone in my family loves it, it reheats well and sometimes there is even enough left to freeze a little for later. Oh, and while I love it any night of the week, it comes together quick enough to even count as a good school night option.

I sometimes make two tweaks…
- Substitute baby spinach for kale and increase the amount I put in
- Substitute freshly grated swiss for gruyere to cut down on the cost
It is fantastic served with a crusty bread, but Edie also recommends serving with Fritos scoops. Yum!!
It is so dreary and drizzly here in Atlanta today. I guess if there was ever a day to stay home and do nothing, one like this is at the top of my list. We couldn’t get going for mass this morning so I have my sights set on tonight. You might remember that this is one of my goals for the new year. <3

Have you ever made it in the crockpot ? I am curious if t would hold up… I’m a big fan of crock pot soups !
I love crock pot recipes too but I haven’t tried this one in the crock pot. I think adding the hashbrowns, cheese and greens would all be dependent on getting the timing just right.
