Mint Chocolate Chip Ice Cream Cake

Honey loooooves mint chocolate chip ice cream and I’ve been on a quest for years (decades?) to figure out the perfect birthday cake for him.  I think I finally found “the one” this year and it couldn’t be easier!  I literally wandered around the Publix the morning of his big day looking for things that would taste good together and could form a cake.  Here’s what we ended up with…

Mint Chocolate Chip Ice Cream Cake

2 packages Mint Chocolate Chip Klondike bars
tub of Cool Whip (thawed)
jar of hot fudge ice cream sauce
container of two bite brownies (bakery)
mini chocolate chips

In a small rectangular baking dish (mine is about 8×10″), cover the bottom with the first pack of Klondike bars.

Crush the brownies on top, then dollop the jar of hot fudge over that.

Cover with the second package of Klondike bars.  Use their wrappers to press them down into the pan.

Top with the cool whip and sprinkle with mini chocolate chips.  Put in the freezer to firm up until serving.

It was really, really, really good.  I really can’t add enough reallys to convey that.  :-)

This was a take on my Ice Cream Sandwich Sundae Cake that is also a HUGE hit around here.  If mint chocolate chip isn’t your thing, try this one!  It’s so great for summer parties.
