Lunches, Lately

Since early March, this bowl has been on my standard lunch rotation. Working at home, I almost always eat lunch at home and this is quick and easy to throw together when you prep everything in advance.

I do a scoop of low fat cottage cheese and top with sliced cucumbers, halved (san marzano are the best) tomatoes, sliced avocado and sliced egg. The key is a hearty does of Everything But the Bagel Seasoning from Trader Joe’s!

My other lunches are loaded salads (arugula, cucumber, tomato, garbanzo, egg, avocado, turkey) and quinoa salad. My kids both eat all of this as well (at home, not in a lunch box!) so I’m really running through the food with them at home this summer too.

If you have a go-to lunch, I’d love to know about it! I’m always looking for new ideas.

And, if you’re wondering, I try to eat well for breakfast and lunch so that I can have all the meat and cheese and pasta and carbs for dinner. :-)

  3. Thanks for sharing. I’m trying to add avocado this summer to my menu. Just not something Ive had in my menu and this looks like a great way to add it in. I know it’s really good for you.

    One lunch I like to have that’s easy to fix is Village Salad (cucumber, tomatoes, red onion and feta cheese) and a little hummus that I dip petite baby carrots in. I’d probably prefer pita bread but like you I try to save my less meat and bread choices for dinner.

    1. That sounds great. I’ve never heard it called Village Salad but love all of those ingredients and think I will add that to OUR fridge next week!
