Oatmeal Freezer Cups + Other Easy Breakfast Ideas

In lieu of my usual Sunday Supper post, I thought I’d share a Sunday breakfast prep idea that will get you through the work week!

A few weeks ago, I made these oatmeal freezer cups. They are absolutely perfect for mornings where you need a filling breakfast in two minutes.

Oatmeal Freezer Cups

  • 5 cups water
  • 1/2 tsp salt
  • 2 cups regular rolled oats
  • 1/3 cup packed brown sugar
  • 1 T. butter
  • 1 tsp cinnamon
  • 1/2 cup dried fruit
  • 1 cup fresh berries, chopped if needed
  • 1/2 cup chopped toasted nuts
  • milk (optional)

In a medium saucepan bring the water and salt to boiling; stir in oats. Cook 5 minutes, stirring occasionally (mixture will be very thin). Remove from heat. Stir in brown sugar, butter, and cinnamon. Transfer to a bowl; cover and chill until cool (mixture will thicken as it cools). Stir in dried fruit.

Grease twelve 2 1/2-inch muffin cups. Spoon about 1/2 cup of the oatmeal into each prepared muffin cup. Sprinkle with fresh berries and nuts; press lightly. Cover and freeze 6 hours or until firm.

Let stand at room temperature 5 minutes. Transfer oatmeal cups to freezer bags or airtight containers. Freeze up to 3 months.

To serve, in a small bowl microwave one frozen oatmeal cup at a time, covered, 2 minutes or until heated through, stirring once. Stir before serving. If desired, stir in milk.

Note: I had every single thing on hand for this recipe so I used craisins for the dried fruit, strawberries for the fresh fruit and slivered almonds for the nut.

Yogurt with Fruit and Granola

This is my other standby. I use non-fat, non-flavored Greek yogurt and top with local honey, fresh seasonal fruit and granola (I like Kashi and stock up when half off). This is good for a day when you have 5 minutes rather than 2. :-)

Egg Cups

This is something new I picked up about a month ago for the first time. The kids like them and we like them. Again, great for a morning when you have 2 minutes. On occasion I add one whole egg and one egg white.

Crock Pot Breakfast Casserole

This one is for when you have more time to prep in advance and need to feed a bunch!

  1. The oatmeal cups sound delicious – I’ll have to give those a try! Our favorite go-to(s) for quick breakfasts are sausage balls and the egg soufflés or omelet cups… they both obviously require prep time up front, but it’s so handy to have them ready when you only have a few minutes! xo
