Sunday Supper {Cinco de Mayo}

We enjoyed our Sunday Supper Cinco de Mayo style tonight! The menu was not earth shattering, but I do have a great meat shortcut, themed dessert and delicious grapefruit margarita to share.

Pink Grapefruit Margarita

This was light and refreshing and I’d definitely make it again.

  • 1 lime, cut in wedges, optional
  • Kosher salt, optional
  • 1 cup ruby red grapefruit juice
  • 1/2 cup freshly squeezed lime juice (4 limes)
  • 1 cup orange liqueur, such a Triple Sec
  • 2 cups ice
  • 1 cup white tequila

Combine the grapefruit juice, lime juice, orange liqueur, and ice in a blender and puree until smooth. Pour into a large pitcher and stir in the tequila. If you’re not serving the margaritas in salted glasses, stir 1/4 teaspoon of salt into the pitcher of margaritas.

Note: I love a sugar rimmed glass so I did add the salt to the margarita pitcher.

My trick to a perfect sugar rimmed glass every time is to use karo syrup, rather than lime juice or water. I put just a little on a plate and roll the edges in it. Then, I roll it in sugar from another plate.

Short-cut Tacos

I know nobody needs me to show them how to make a taco bar, but I did want to share two favorite short-cuts! We LOVE the barbacoa meat from Costco and it easily fed six of us. We also love this guacamole. I almost never make my own any more – it’s that good. The guac can be found at Publix, but it is a much better buy at Costco.

Churros & Chocolate

For an easy themed dessert, I made “baked” churros and served with chocolate ice cream. It is always a hit!

For the churros, simply take a sheet of puff pastry and thaw. Cut it in half, and then cut each half into strips about 1″ wide. Bake at 400 for 15 minutes, or until puffed and golden brown. As soon as they come out, while hot, brush with melted butter and coat with cinnamon and sugar.

It was a weekend full of celebrating, between May the Fourth for Jay’s Birthday, Derby for a friend’s 40th and Cinco de Mayo!
