Sunday Supper {Lasagna Soup}

On the very first morning where I woke up with a fall like cool in the air, I was ready for alllll the soups, stews and chilis. I took to my personal Facebook page and asked my friends to share their favorites. It is an excellent thread and I can’t wait to cook my way through the recommendations. That very night we started with Lasagna Soup.

I doubled the recipe so that I would have plenty to freeze and boy am I glad I did. We all LOVED it!!! I rarely print a recipe to keep in my binder, but this one went directly in said notebook. It was delicious, relatively easy and makes a good amount (even without doubling).

Lasagna Soup

Serves 6

  • 1 Tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 4 cups chicken broth (plus more if you want to thin)
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (14.5 oz) can crushed tomatoes
  • 2 1/2 Tbsp tomato paste
  • 1 3/4 tsp dried basil
  • 3/4 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 8 lasagna noodles, broken into bite size pieces
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 8 oz ricotta cheese
  • Fresh parsley, chopped, for garnish
  1. Heat oil in a large pot over medium-high heat. Once hot, crumble beef and onions into pot, season with salt and pepper to taste and cook, stirring occasionally until browned. Drain fat.
  2. Add garlic and saute a few minutes. 
  3. Add broth, all tomatoes, tomato paste, basil, oregano, rosemary, thyme.
  4. Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
  5. Meanwhile, prepare lasagna noodles according to directions listed on package.
  6. In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta.
  7. Stir cooked pasta into soup. Thin soup with a little more broth if desired.
  8. Ladle soup into bowls, dollop with a large scoop of the cheese mixture and sprinkle with chopped parsley.

This recipe is courtesy of one of my oldest friends, Erin. We were sorority sisters at Georgia Tech and really became close via the trials and tribulations of our IE senior design project. We’ve had countless great adventures over the years and our friendship has survived the highs and the lows of growing up from ages 18 to 40-something. Some of my favorite memories are lining up our babies in matching outfits at the beach, getting my car stuck on a HUGE boulder in college, and meeting jeans designers in NYC.

  1. This looks amazing…..I have to try it! BTW, I just read a story online that a group of Disney bloggers in Florida has set up a food bank for all the Disney workers who have lost their jobs due to COVID. I believe its called Second Harvest but I might have it wrong. t

  2. Thank you for sharing such scrumptious recipes. I recently made your twice baked potatoes and last night I tried the lasagna soup. Both are so, so good and I have already added them to my own family recipe binder.
