Our Favorite St. Patrick’s Day Lunch {Corned Beef Sandwiches}

Our very favorite St. Patrick’s Day lunch only takes a few minutes to prepare!!  I get “very thin” sliced corned beef, swiss cheese and seeded rye bread from the deli for the sandwiches.  We all differ in how we like ours prepared, but I love mine toasted with a little mayo (Duke’s of course).  For festive sides I throw carrots in our pots of gold / halloween cauldrons and add mint Oreo’s.

Y’all know that I love to use wrapping paper runners on the table for holidays.  This paper was left over from Christmas but doubles up for St. Patrick’s Day just fine.  I found the plates years ago at Wal Mart and the rainbow glasses were sent to me from General Mills a while back.

  2. Looks yummy! However, did you know that Corn Beef is not actually Irish. Irish immigrants were taught by the Jewish families when we came to America, how to make it! My family always had The Irish Beef stew and we would have my grandparents over for dinner on St. Patricks day and then my Mom would make some dessert and serve it with Irish Coffee’s with the creme de menthe and whip cream!

    1. I did not know that :-) Growing up in Savannah corned beef was a staple all month long for the festivities!
