Red Gold Skinny Lasagna
Prep time: 20 min, Cook time: 1 hour
1/2 cup water
1 28oz can Red Gold Crushed Tomatoes
1 14.5oz can Red Gold Diced Tomatoes with Basil, Garlic and Oregano
pepper to taste
1 tsp Italian seasoning
1 lb lean ground beef or ground turkey, cooked and drained
1 box lasagna noodles, uncooked
1 15oz carton low fat cottage cheese
2 cups shredded low fat mozzarella cheese
1/2 cup grated parmesan cheese
- Preheat oven to 350. In large mixing bowl, combine water, all tomatoes, pepper, Italian seasoning and cooked meat.
- Cover the bottom of a 9x13x2” pan with 1 1/2 cups sauce mixture. Arrange 1/3 of noodles on top of sauce, slightly overlapped. Top with 1/2 of cottage cheese, 1/2 of mozzarella cheese and 1 cup of sauce. Repeat layers and top with last 1/3 of noodles and the remaining sauce. Sprinkle with parmesan cheese.
- Cover tightly with foil and bake for 1 to 1 1/2 hours until noodles are cooked. Let stand 10 minutes before serving.

Now, I was super-tasking (that’s one step beyond just multi-tasking) while I was layering the ingredients and didn’t reserve any sauce to top off the final layer of noodles. So, while mine looks a little odd, it was still quite yummy! I will always adore the Classic Lasagna from the Bride & Groom: First and Forever Cookbook more than words can convey, but this one is PERFECT for a quick and easy, better for you version.
