Raspberry Limeade Granita

There is a laundry list of things I’m thankful for today and Mother is at the top of that list.  She has tirelessly tended to me day and night, preparing meals, administering meds, making sure I do my breathing treatments (we don’t want a collapsed lung), walking Elsa, handling homework for the littles and so on and so forth.  She helps me move my operation downstairs during the day and we chat, read magazines and snack on divine treats like this Raspberry Limeade Granita during my lucid moments.  It’s sweet and tart and fruity and light and feels positively divine on my scratchy throat (thank you anesthesia).

Raspberry Limeade Granita (serves 6)

1 cup fresh raspberries
1/2 cup fresh lime juice
1 1/2 cups simple syrup
chilled rum (optional – we opted out)

Process first 3 ingredients and 1 cup cold water in a blender for 30 seconds or until smooth.  Pour into a 9×5″ loaf pan.  Freeze 4-5 hours or until ice crystals form, stirring every hour.  If desired, top each serving with a shot of chilled rum.

Simple Syrup (makes 1 1/2 cups)
Bring 1 cup water and 1 cup sugar to a boil in a saucepan over medium heat stirring occasionally.  Boil 1 minute or until sugar dissolves.  Remove from heat and cool 30 minutes.  Refrigerate.

 

If I wasn’t hurting so badly I’d say we were having fun :-)  Regardless, I will treasure this time with Mother.  I don’t know how I ever got so lucky as to call her my own.

  3. I can relate to your thankfulness of a mom who will drop everything to come & take care of you and your family. When I was diagnosed w/ovarian cancer my mom basically moved in w/us to help out. She really helped keep life as “normal” as possible for our daughter (who was 7 @ the time). My mom was just amazing and I don’t feel like I will ever be able to adequately let her know how much my family appreciates what she did. My dad was great too because he had to live as a “bachelor” while she was with us. Happily we are almost 5yrs past that very scary time and all is well :-) I remember the “breathing exercises” and doing them after the hysterectomy and a pulmonary embolism that occurred during my treatment.
