Kodiak Cakes

My kids have been devouring boxes of Kodiak Cakes pancakes since the summer.  They are made with 100% whole grains, have 8 grams of high-quality protein per serving, are non-GMO and have no artificial preservatives.  I don’t personally love them, but the boys do.  We will make a whole bunch every few days and then they reheat for easy snacks and breakfasts.  You can find the mixes at the grocery store, Costco and on Amazon.

Well, a few weeks ago I discovered Kodiak Cakes chocolate muffins at the grocery store and these I DO love!  We all do!  They are so easy and make for a yummy breakfast.  I substitute plain non-fat greek yogurt for the oil, which adds more protein and takes out more fat.  In fact, I make that substitution in almost all of my muffin and quick bread type baking.

  1. I’ve never seen these, but thank you for sharing! We’re currently in the throes of trying to find HEALTHY (extra) protein boosts for Ryan – no protein powder here! We have several smoothie recipes, but no “real food”. We’ll definitely be checking these out.

    Now, have you tried the egg muffins or baked omelets (whatever you want to call them)? I mix up a big batch of these over the weekend – we’re currently using peppers, onions and cheese, but have tried spinach and mushroom, cheese & jalapeño, bacon & cheese – and put them in a ziplock for the week ahead. They reheat beautifully in the microwave for 45 seconds and they are a huge hit with my husband and both boys! They bake in the oven (use cupcake liners) for about 20 minutes and could not be any easier. They freeze beautifully too!

    1. I have not tried these baked omelets but that’s a great idea!! I might do some tonight because I have a ton of eggs to use.

  2. My guys are okay with Kodiak too. I think after 40 years of fluffy pancakes a protein cake and a pancake are apples and oranges to us so long in the tooth. :)
    Glad to know about the muffin mix – like a Vita Top but not $1.50/top.

    I have made these but never tried freezing. Like a mini muffin tins with hash browns. Bake a bit. Add what is basically omelette batter of your liking and bake some more.

    Have you had your DC vacation yet? I am 9 miles (and 40 minutes in traffic;) from The WH – oh if I somehow caught a glimpse of you! Awesome weather here today through next week.

    1. Haha, I guess you are right about that. I don’t eat a whole lot of breakfast baked goods but when I do I guess I like them full of white flour and sugar.

      We head to DC in the spring. I can’t wait!! I was literally just looking at a few websites to see what will be going on during our visit.
