Instant Pot Eats {Irish Beef & Guinness Stew}

I’m continuing the St. Patrick’s Day celebrations at home today with a favorite we’ve been enjoying for years – Irish Beef & Guinness Stew. This is a version I tweaked for the Instant Pot, but it would be easy to cook in a dutch oven or crock pot as well. It’s really just a basic beef stew with the addition of a Guinness and some caraway seeds.

Beef and Guinness Stew

  • 3 tablespoons canola oil, divided
  • 1/4 cup all-purpose flour
  • 2 pounds boneless chuck roast, trimmed and cut into 1-inch cubes
  • 1 teaspoon salt, divided
  • 2 chopped onions
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 bottle Guinness Stout
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1 1/2 cups diagonal slices carrot
  • 1 lb. diced new potato (I used a bag that was 24 oz)
  • 1 cup chopped celery
  • 2 tablespoons finely chopped fresh flat-leaf parsley

1. Heat 1 1/2 tablespoons oil in saute mode in Instant Pot. Place flour in a shallow dish. Sprinkle beef with 1/2 teaspoon salt; dredge beef in flour. Add half of beef to pan; cook 5 minutes, turning to brown on all sides. Remove beef from pan with a slotted spoon. Repeat procedure with remaining 1 1/2 tablespoons oil and beef.

2. Add onion to pot; cook 5 minutes or until tender, stirring occasionally. If you have a bunch of flour stuck to the bottom of the pot, go ahead start adding a little of the beer to scrape it off. Stir in tomato paste; cook 1 minute, stirring frequently. Stir in broth and beer, scraping pan to loosen browned bits. Return meat to pan. Stir in remaining 1/2 teaspoon salt, caraway seeds, and pepper.  Add carrot, potato and celery.

3. Turn the vent to sealed and pot to high pressure cook mode and time 35 minutes. When finished cooking, let the pressure release naturally for about 10 minutes, then flip the vent to the quick-release pressure.  Sprinkle with parsley.

NOTE: Always follow the manufacturer directions for your specific Instant Pot, including on sealing, venting and cooking times.

It’s been quite a week, right?! And we finally made it to Friday the 13th, of all days. We had a monumental fight with the teen about a sleepover party. Then, right after dinner, Elsa head butted me and actually chipped my tooth. True story. (Dentist said to come in on Monday.) She must have knocked some sense into me because at that very moment, I realized I had served my family beef stew on a Friday during Lent. It was like the final blow and I burst into tears. I have to remind myself that not only should we try to give others a little extra grace, but it’s okay to give ourselves grace too. Whew!
