We’ve been eating this easy to prepare, delicious salad on repeat the past month! There’s not a recipe, just throw in whatever you have that’s fresh and needs eating…. basically everything but the kitchen sink. :-)
My favorite ingredients are:
- Black eyed peas
- Fresh corn
- cucumber
- grape tomato
- red onion
- red, yellow and/or green peppers very finely diced
I throw it all in a big bowl and toss with a little Garlic Expressions salad dressing. My bestie introduced me to this dressing and it is THE BEST! I find it on the top row at Publix with the shelf stable salad dressings. It’s in a green bottle and, as she promised, is often sold out. I’ve been buying two bottles when I find it.
The salad is great on its own as a snack, poured over a bed of greens, and as a side with grilled meat. Like I said, we’ve been eating it often and in a number of different ways.
