Waste Free Wednesday

Today is Waste Free Wednesday at the PCP’s school and, while we try to pack a waste free lunch every day, he gets waaaay more into it during this official, once monthly event where students that comply are recognized with lavish and luxurious prizes.  Take last month’s tie-dyed reusable napkins, for instance.  You’d have thought it was cashmere the way he was hootin and hollerin over it.

Here’s what he carried off to school today:

PB&J “Sushi” Sandwich, skim milk mozzarella cheese slices, edamame, honey crisp apple slices and a couple of Halloween Oreos

Here’s how I made the “Sushi” sandwich:
1. You’ll need two slices of bread, sandwich fixins, a rolling pin and a knife.

2. Cut the crusts off your bread.  Line them up so that one slice of bread slightly overlaps the other slice, mush them together and then roll them out till flat and the seam is stuck together.  I used peanut butter and jelly for this sandwich, but meat and cheese, peanut butter and honey or peanut butter and marshmallow fluff (mmmmm….guess what I just decided to lunch on today?!?!) would work equally as well.  Go light on the insides and leave a little bit on one end of the bread so that when you roll it up the insides don’t squish right out.

3.  Roll it up and slice your sushi!

A water bottle and reusable napkin fit right inside his box for a waste free, super yummy lunch!

I think the baby and I will be having a repeat of our rainy yesterday…loads of potty trips (and the resulting gummy bear), tons of snuggling and Mickey Mouse watching in Mommy’s bed, and no less than twenty rounds of Candy Land.
