Cheerios Cherry Almond Squares

We’ve been gobbling up these handy on-the-go granola bars made with the new Cheerios + Ancient Grains!  They took no time to make and all of us have been enjoying them.  I wrap them in parchment and have been sending them to school for the littles’ snacks this week.DSC_0006 copy

No-Bake Cherry Almond Squares
2 cup Cheerios + Ancient Grains cereal
1/2 cup oats
1/2 cup dried cherries
1/2 cup creamy almond butter
1/3 cup honey
3 T. brown sugar

1. Line bottom and sides of 8” pan with foil and spray with cooking spray.  In a large bowl, mix cereal, oats and cherries.  Set aside.
2. In large microwavable bowl, cook almond butter, honey and brown sugar for 1 minute, stirring half way through.
3. Pour over cereal mixture and stir until evenly coated.  Use hands or parchment to firmly press the mixture into the pan until compacted and firm.  Pop in the fridge for about 1 hour.
4. Cut into bars and store covered in fridge for up to a week.

I’m out of granola and have been using the rest of the cereal in the box on top of my yogurt.  Add a drizzle of honey and fresh berries and it’s a REALLY yummy, filling and healthy way to start the day.

With that, I’m off to volunteer for science lab in John’s class and to do a STEM project with Whit’s class.  The timing of those activities prohibit me from dining with either of them in the café.  Coincidence? I think not.  :-)
