Krusteaz Pumpkin Muffins 3 Ways + Giveaway

Krusteaz sent us a giant box of their new mixes for making Pumpkin Spice Cookies, Pumpkin Spice Muffins, Pumpkin Spice Bars and Pumpkin Spice Quick Bread!!  I kept  few for us and distributed the rest to the ladies at the bus stop.  After receiving rave reviews from the neighbors, we finally made some of our own.

Using the pumpkin spice muffin mix, Whit and I made three varieties: pumpkin chocolate chip, pumpkin cream cheese and regular pumpkin.  One of my neighbors told me how to do the cream cheese version and I’m SO glad she did!  All of them were a HUGE hit and didn’t last long at all in the house.

I always substitute plain greek yogurt for oil when making muffins or quick breads.  It is a 1:1 substitution and won’t change the flavor at all.  After mixing the rest according to the directions, we spooned half of the mix into a pan sprayed with Baker’s Joy with Flour.

On one row we added mini semi-sweet chocolate chips and on the middle row we added a cube of cream cheese.

After spooning the rest of the mix on top, we added more chocolate chips to that row.  For the cream cheese row we put a small sliver of butter and brown sugar on top.  Even if you don’t add the mix-ins, I would recommend adding the butter and brown sugar on top.

They were all delicious!  The chocolate chips were the kid favorite and the cream cheese were the adult favorite.

These only lasted a couple of days so I made a new batch today and shared it in my InstaStories.  I was on a bit of a cooking binge getting ready for another week.

*fingers crossed* It looks like we might finally have some fall weather moving in this week!!  I swapped out my closet when we got back from Disney and have now been digging through the back every day for the summer clothes.  I haven’t even had the first pumpkin spice latte.  (the horror, ha!)
