Sunday Supper {Skinny Chicken Enchiladas}

I’ve been a fan of Skinnytaste for a long, long time. I love Gina’s recipes because they are fairly easy, are packed with flavor, and are skinny while still being tasty.

Skinnytaste Chicken Enchiladas

Her “BEST Chicken Enchiladas Recipe” is one I’ve made many times and that my family loves. The chipotle chilis in adobe do add spice so I go with the minimum amount. I wouldn’t omit because the smoky flavor is delicious!

Cooked Chicken for Recipes

Here’s how I cook my chicken for recipes.  I usually do it early in the day or the night before.

  • Place chicken breasts on baking sheet with sides (to catch the grease), skin side up.
  • Rub olive oil on breasts, sprinkle with salt and pepper.
  • Bake at 350º for 45 minutes.
  • Cool, then place in Kitchenaid stand mixer with paddle attachment to shred

Funny while I don’t immediately think of you blog as a ‘food blog’ I have made as many of your recipe posts as I have from the food only blogs :-) And I never considered using my KitchenAid with paddle to shred cooked chicken. I will try to next time. And I will try your method for cooking in the oven. Always trying different methods for cooking chicken breasts. Getting perfect moist chicken breast isn’t a given. Too much dried out chicken breast in my past attempts. I think different ovens play a big role too. And using skin on breasts. Thanks.
