Super Bowl Taco Bar (And The BEST Shredded Chicken)

In honor of “Man Day”, the guys around here did absolutely nothing today. And I mean even more nothing than their usual nothing. :-) I don’t think one of them even took of their pjs or combed their hair. We are enjoying a quiet evening at home downing tacos (their request) and watching the game.

Super Bowl Taco Bar

A taco bar hardly warrants a post, but here’s what I served:

  • Taco beef
  • Shredded chili lime chicken (absolutely amazing, recipe follows)
  • Tortilla bowls, warmed (my boys favorite for taco night, so easy to eat!)
  • Daddy-OLE’s Homemade Salsa
  • Sour cream, lettuce, tomato, sour cream, jalapenos, taco sauce, shredded cheese
  • Rotel dip in

Shredded Chili Lime Chicken

This chicken is absolutely delicious and full of flavor. Every time I make it I literally cannot stop eating it. The recipe is HERE from Half Baked Harvest. She makes it in the crock pot, and that works perfectly. Tonight I didn’t have 6 hours of lead time, so I threw everything that would go in the crock in the instant pot and cooked it on high for 15 minutes, did a 5 minutes natural pressure release and then flipped it to venting. I shredded it, and added the lime and cilantro just lie you’d do in a crock pot. Since I still had a bit of time before serving, I turned it to Keep Warm until we ate.

Super Bowl Party Decor

I pulled out all of my old football entertaining pieces from the years when we tailgated religiously every weekend from September through January. The napkins and paper cups were left over from last year. I didn’t purchase a thing but the food. Here are a few sources:

  • Silver football pieces by Hollybelle (this was popular in 2002)
  • Turf tablecloth (reusable from Party City)
  • White oval with football attachment by Happy Everything
  • White rectangle with football attachment by Nora Fleming
  • Mini crock pot – I use this ALL the time for entertaining and just regular dinner at home for hot dips, baked beans, etc.

I’ve cleaned everything up, enjoyed a few commercials, wrote this post and will head to a long, hot bubble bath after the half time show. I am really looking forward to that!!
