Sunday Supper {Wedding Lasagna}

This is one of the very first things I ever made for Honey after our wedding.  Fifteen years ago I didn’t know how to boil and egg (serious) so this was quite the feat.  Since then it’s been a staple on our Sunday table and is a favorite for the whole family.  I call it “Wedding Lasagna” because it is the one and only thing I ever made out of the Bride & Groom First Cookbook that everyone getting married in the early 2000s was getting :-)

So, who knew trying to photograph lasagna could be so challenging?!  It’s a hard dish to make *look* appetizing in a photo so just trust me on how good it is.

Wedding Lasagna

8 oz ground beef
8 oz Italian sausage links, removed from casings
1/2 tsp. kosher salt
1/2 tsp. freshly ground pepper (divided)
2 jars marinara sauce (24-26oz. each)
8 oz ricotta cheese
8oz cream cheese at room temperature
1 cup parmesan cheese
box of no-boil lasagna noodles
1 cup fresh basil, torn
2 cups mozzarella cheese shreds

Preheat the oven to 375° F. Lightly spray a 9 x 13 baking dish. Combine meats in a large saute pan and cook until the meat is lightly browned, 8 to 10 minutes. Be sure to crumble the sausage as you cook.  Drain meat and add marinara sauce.  Add salt and 1/4 tsp pepper.  Stir well.

Meanwhile, mix ricotta, cream cheese and parmesan cheese in a bowl with 1/4 tsp pepper.

Cover the bottom of the prepared baking dish with 1 cup of the meat sauce.  Arrange a single layer on top of the sauce:
lasagna noodles
1 1/2 cups meat sauce
1/2 of cheese mixture
torn basil leaves

REPEAT

Top all of that with a layer of lasagna noodles, the remaining meat sauce and all of the mozzarella cheese.

Cover with foil and bake for 30 minutes. Uncover and bake until the cheese is bubbly and golden brown, 10 to 15 minutes more. Let stand for 15 minutes before serving.

Notes:

  • Since many of the ingredients come with enough in the package for TWO entire pans of lasagna, I always make two.  Be sure to check your ingredients as you shop because the only thing I usually need extra of is the sauce, cream cheese, mozzarella cheese and noodles.  I assemble both and bake one.  I wrap the other well before baking and freeze.
  • Per the above, this is one of my faves for when a friend needs a meal since it’s so easy to double.  Add a bag of salad and a loaf of french bread and it’s a lovely meal.
  • I substitute chicken sausage for regular and nobody here is the wiser :-)
  • This is great to make early in the day and then just heat up for dinner.  We get 2-3 full meals out of one pan!

  1. Looks yummy! It has been a crazy weekend in South Georgia. We have stayed safe and our little town fared well, but I am hearing 11 died in a tornado overnight 20 minutes away and something like 25 were killed altogether. Unbelievable destruction.

  2. I’ve made lasagna for years, and sadly, I’m in only one in our home who loves it. The cheesy layer is my favorite part – but I’ve never heard of mixing the ricotta with cream cheese! Yummy! Now my once a year pan will be so much better! ?

  3. Thanks, Amanda! I have this cookbook, but have never tried the lasagna. It sounds delicious! You should try the Sausage and Cheddar Strata. It’s great for a weekend breakfast or to take to a friend (just add a fruit salad and muffins)! I can’t wait to hear about precious CeeCee’s birthday celebration! I have a Cece myself who is about six months younger than your niece :)

  5. My husband doesn’t care for lasagna, so I have only made it once. I just watched them make BBQ pork lasagna on the Today Show, and I bet he would be willing to try that lasagna. I sometimes buy a frozen single serving size when I get a craving. I could also do like one of your other readers and try your recipe for a once a year lasagna.
