Sunday Supper {Tortilla Soup}

I made the Tortilla Soup from Magnolia Table last weekend and it was our favorite tortilla soup we’ve had!  We will absolutely be adding this to our fall rotation.  It was fairly easy, aside from cooking and shredding the chicken.  I also tend to favor recipes that make a LOT because my boys eat a lot and I like to have leftovers so that I can cook every other night.

Shredding a rotisserie chicken would certainly save time, but they are too pricey and don’t have enough meat for my liking.  :-)  I always just line a pan, distribute my boneless, skinless chicken breasts, drizzle with olive oil, salt and pepper, and bake at 350 for 45 minutes.  I shred once slightly cooled.  Cooking the chicken is really the only reason I’m calling this a Sunday Supper rather than a School Night Supper.

Note: I did not add the jalapeno and I did add the cumin.  It was wonderfully flavorful.

  1. Did you know that you could shred chicken using a Kitchen Aid flat beater? Just do it on a low speed. Easy, peasy if you have the machine.

    1. It is!! I made a chicken and wild rice soup last night and both the kids asked about the tortilla soup :-)

  2. Have you ever tried putting your chicken in the mixmaster with the white paddle to shred it? You just do it for a very short time and it shreds it perfectly. It was a game changer for me.

  3. Looks wonderful. We love soups for the fall and winter. Did you use a fresh tomato? Wondering if you could use diced tomatoes.

  4. Costco sells packs of the breast meat from their rotisserie chickens- VERY reasonably priced, AND you don’t have to pick the meat off the bones! (EW. lol) It’s my favorite hack to have on hand for things like this!

  5. I can’t wait to try this soup. I have tried several of her recipes and all were fantastic! My husband loved her egg salad. We love her salsa and pancakes. My daughter tried her chicken spaghetti and said it was great. She also made Jo’s biscuits and she and her husband said they were the best ever. Thank you for sharing.?.

  6. I agree with the other ladies about shredding your chicken in the mixer. Also, I often make chicken broth (soup base) from scratch and then freeze the broth and shredded chicken to use later for tacos, chicken and dumplings, chicken noodle soup, etc. Then I usually mash up the veggies I cooked in the broth and freeze them to add to the soups in the future as a thickening agent. One day cooking and shredding whole chicken isn’t too bad when I can think about the multiple dishes I will use it all for in the future.
