Happy Hour {Cotton Candy Cocktail for Valentine’s Day}

Ever since I had a cotton candy martini in a local restaurant I’ve wanted to create my own. Well, Sister left me with extra cotton candy after CeeCee’s birthday party and it was just the impetus I needed to get started!

I used one of our favorite cocktails as the base…

Pomegranate Gimlet

For 6 Drinks:

  • 1.5 cups good gin
  • 1 cup pomegranate juice
  • 1 cup lime juice
  • 1/2 cup simple syrup
  • Pom seeds and lime slices for garnish – Omitted for this

For 2 Drinks: (We certainly did not need six, although they are quite tasty!)

  • 3 oz good gin
  • 2 oz pomegranate juice
  • 2 oz lime juice
  • 1 oz simple syrup
  • Pom seeds and lime slices for garnish

At least one hour before serving place martini glasses in freezer. For 6 drinks, combine the liquids in a large pitcher. For 2 drinks, combine in measuring cup. Fill the cocktail shaker half full with ice and add drink mixture until shaker is 3/4 full. Shake for a full 15 seconds. Pour into martini glass and garnish with a teaspoon of pom seeds and a slice of lime. Repeat with the remaining drink mix and serve ice cold.

I almost cut out the simple syrup as I didn’t know if the sugar from the cotton candy would make it too sweet. Strangely, it did not! This cotton candy did not melt like the cocktail I had previously. I think because it was pre-packaged and pretty solid, not fine and lightweight like fresh cotton candy. Regardless, it was fun and cute!
