I shared part 1 of my Empress popsicle creations a couple of weeks ago and am back today with part 2… Empress Lavender Lemonade Popsicles! I made these last fall and, like the Elderflower Southsides, just tried them out for the first time this week. They were yummy and refreshing and I can’t wait to have the ladies over to enjoy the rest.
Lavender Lemonade Popsicle
Light lavender & bright lemonade make this recipe perfect for kicking off the season!
- 4 oz Empress Gin
- 2.5 oz simple syrup
- 24 oz Lemonade
- Thin sliced and halved lemons, if desired
Mix all ingredients, except the lemons, in a container or pitcher at least 1L in size. Stir, and pour into the popsicle molds. Place one slice of lemon in each of the molds, using a popsicle stick to push them inside. Freeze for minimum 6-8 hours, until solid. Remove the popsicles from the freezer and let sit for a few moments before slowly pulling them from the molds. Avoid using hot water to remove as this will encourage melting. Enjoy!
I have this popsicle mold and it works wonderfully! It is a complete kit with a mini collapsible funnel (we use it all the time for various things) sticks and clear baggies for storing your creations.
