We continued the St. Patrick’s Day festivities over here with a theme breakfast for lunch! Mass and bingo at the senior center took our morning but I promised Whit waffles and waffles he would get!

I pulled out all the green, orange and rainbow stops for this little affair! I reuse the same decorative items each year, with my Nora Fleming and Happy Everything! pieces being the most versatile. The banner on the beverage bar is Birthday Butler.


Since it’s just the three of us, I’m working on scaling back things like this to include the “right” amount of food. John was 25% of our headcount but probably 35% of our consumption. :-) Given this, I simply served a small rainbow fruit tray and a half batch of mini waffles.

I used this recipe for the waffles and they tasted no different than those out of the box! The simple ingredients were eggs, greek yogurt, honey, flour, baking powder and salt. I saved about half of the batter for breakfast before school one day this week.

Orange juice is a perfect and tasty color pop for St. Patrick’s Day. I’ve had the cups, plates and napkins for years. I did buy this cute paper to make shades for my LED lights. It’s also the perfect width for a runner. I have plenty left for the Master’s and think it would be cute at Easter, too.

We have Cottage Pie on the menu for Sunday Supper and since St. Patrick’s Day is on a Monday (my busiest work day of the week) I’m doing corned beef sandwiches with sweet potato fries.

Such a cute breakfast. St. Patrick’s Day snuck up on me after a crazy busy weekend, and my daughter was disappointed the Leprechaun had not brought breakfast. :- ( I need do better at keeping an eye on the calendar when I am meal planning.
