Pop In & Sip Awhile {Hugo Spritz}

July’s Pop In & Sip Awhile came together at the last minute, but sometimes those end up being the easiest evenings. I didn’t even send the text invitation until the day before. Many on our list were traveling so we had a smaller group than usual. Truth be told, I rather enjoyed it!

This month’s featured cocktail was a Hugo Spritz, and I think it was the perfect choice for a hot summer evening. Light, crisp and refreshing, it quickly became a favorite as most had not ever tried one! Even better, I was able to step right outside and clip fresh mint from my own garden for every glass.

Hugo Spritz

  • 2 ounces St-Germain Elderflower Liqueur
  • 3 ounces Prosecco
  • 2 ounces sparkling water
  • Fresh mint
  • Lime wheel
  • Ice

Lightly muddle a few mint leaves in the St-Germain before adding the ice, Prosecco and sparkling water. Stir gently and garnish with another sprig of mint and a lime wheel.

I kept the food intentionally simple. The whole idea behind these evenings is that they’re a chance to pop in, have a drink and enjoy good company, not come for a meal. I put together an assortment of cheeses and crackers, just enough for everyone to nibble while they visited. The surprise hit of the evening? A big bowl of boiled peanuts. I set them out almost as an afterthought, and they disappeared faster than anything else on the table. Leave it to a Southern crowd to choose boiled peanuts over hors d’oeuvres!

We ended up with two more after this photo. A fun little group!

I’m so grateful we’ve kept this little tradition going. Every month reminds me that gathering friends doesn’t have to be elaborate to be meaningful. An open door, a signature cocktail and a few simple snacks are more than enough when the company is this good.
