For May’s Pop In & Sip Awhile, we ended up rallying the crew and hosting our little open house on Honey’s birthday.
Having a party for his 50th last spring was already a stretch for him. He has never enjoyed being the center of attention and is much happier quietly visiting with friends than being celebrated himself. When we decided to host Pop In & Sip on his actual birthday, he agreed to it only if we treated it exactly like every other gathering. No birthday theme, no special attention and no mention of the occasion.
Truthfully, it felt perfect.
Friends popped in throughout the evening, the house stayed full and the conversation never seemed to stop. It was one of those nights where people arrived, visited for a while, then made room for the next group to come through. In many ways, it was more meaningful than a traditional birthday party because he spent the evening doing exactly what he enjoys most: visiting with people he loves.


Since the evening happened to be his birthday, I did insist that he choose the featured cocktail. To absolutely nobody’s surprise, he selected margaritas.
If you’ve been around Dixie Delights for long, you know Honey is serious about his margaritas. The night before the party, he stood in the kitchen hand squeezing lemons and limes for the better part of an evening. I suggested there were easier methods available in 2026, but he remains convinced fresh citrus is the only acceptable option. Judging by how many compliments the margaritas received, he may have a point.
The recipe is based on his beloved Nuir’s Margarita, which I’ve shared before, though he’s tweaked it to work better for entertaining a crowd.
For the mixer, combine:
- 2 parts fresh lemon juice
- 1 part fresh lime juice
- 1 part orange juice
- 1 part homemade simple syrup
For the spirits, combine:
- 2 parts good tequila
- 1 part triple sec
When serving, mix equal parts citrus mixture and spirits. Rim the glasses with a mix of sugar + Tajin.
The result is bright, fresh and incredibly easy to sip on a warm spring evening.


As always, the focus of Pop In & Sip Awhile wasn’t really the food or even the drinks. The entire point is simply creating a reason for friends to stop by. Some stay ten minutes. Others stay three hours. There is no schedule, no meal and no pressure. Just a standing invitation to pop in for a sip and stay awhile. I continue to be amazed by how much joy these simple evenings bring.
We had just a little margarita mixture left at the end of the night, which found its way into the freezer rather than down the drain. One of these upcoming pool afternoons, we’ll blend it into frozen margaritas and toast to another successful gathering.
As for Honey, I think the evening turned out exactly as he hoped. There was no spotlight, no fanfare and no birthday fuss. Just a house full of friends, plenty of laughter and a pitcher of his favorite margaritas.
For him, that’s about as perfect as a birthday gets.
