Sunday Supper {The Cheese Gal’s Skillet Enchilada Bake}

I preordered Cortney LaCorte’s new cookbook, Oversharing: Anytime Snacks, Everyday Dinners, and Cooking for Company, months ago, so I was downright delighted when it finally landed on my doorstep.

If you don’t know Cortney, you might know her better as The Cheese Gal. I first came across her on TikTok years ago when she was sharing a wild, multi-part story about how she and her family uncovered a woman who had deeply infiltrated and conned her single father’s life. I was completely invested and kept coming back for the next installment.

The story may have been what initially hooked me, but Cortney herself is why I stayed. I loved her warmth, humor and authenticity, not to mention the fact that she is a fantastic storyteller. Over the years, I’ve loved following along as she decorates, travels and gives us little peeks into life in the Nashville country music world with her husband. But as much as I enjoy all of that, it is always the food that keeps me coming back.

Cortney is responsible for the very first martini I ever made, which is pretty funny considering how that has turned out for me. I followed her method, right down to stuffing the olives with blue cheese, and apparently there was no looking back.

Her Whipped Goat Cheese and Crispy Baked Boursin have both been in my permanent rotation for years. I’ve made her Lemony Baked Boursin Pasta for Sunday Supper, and the baked Boursin even made an appearance at our very first Pop In & Sip Awhile. And then there are the cocktails. One Thanksgiving week, I made a different Cheese Gal cheese and cocktail for happy hour every night my parents were here. So, yes, I had high expectations for her first cookbook.

Oversharing is filled with exactly the sort of food I hoped it would be: couch snacks, cocktails, everyday dinners and recipes for having people over. It feels very much like Cortney herself, which I suppose is the whole point.

The first recipe I made was the Skillet Enchilada Bake.

It was easy, delicious and hearty, which is exactly what I expected from a Cheese Gal recipe. It was perfect for a school night and loaded with so much cheese I actually questioned the Cheese Gal for a moment. Turns out, she nailed it.

And perhaps the best review I can give the cookbook is that I had barely cleared our Skillet Enchilada Bake from the table before I was already flipping through it deciding what to make next. Tonight, her Baked Beef Tacos will be gracing our table.

I have a feeling Oversharing is eventually going to look like all of my favorite cookbooks do: dog-eared, splattered and filled with little notes about what we loved and what I need to make again. Based on recipe number one, it is off to a very good start.
