Sunday Supper {Chocolate Icebox Cake}

This was not from our Sunday Supper tonight, but rather a dessert I took to Sunday Supper with our neighbors at the end of the summer.  It is absolutely delicious, feeds a good crowd (we had 9) and should be prepared in advance.

Chocolate Icebox Cake

2 cups cold heavy cream
12 ounces mascarpone cheese
½ cup sugar
¼ cup Kahlúa liqueur
2 tablespoons unsweetened cocoa powder
1 teaspoon instant espresso powder
1 teaspoon pure vanilla extract
24-32 chocolate chip cookies
Shaved semisweet chocolate, for garnish

In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, Kahlúa, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.

To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.

Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

Notes:

  1. I realized after I bought it that my marscapone was not 12 oz.  I want to say it was 9 oz.  This did not change the delicious taste, in my opinion.
  2. I used instant coffee rather than instant espresso.
  3. I baked Tollhouse break-and-bake chocolate chip cookies for this.  I used 2 packages but had cookies left over.
  4. I think my pan only made 4 layers and some were quite thin.  I couldn’t get 5 layers out of it.
  5. I made mine the morning of the dinner and didn’t have time to put in the fridge over night.  Turned out fine.  It was in there for at least 6 hours though.

This dessert is decadent and definitely company worthy!  It comes from the How Easy Is That? cookbook, which I love.  My all time favorite is Foolproof.

I hope y’all had a great weekend.  We started back in full swing with baseball and lacrosse.  It was a gorgeous weekend to be outdoors though – felt like summer!
