Sunday Supper {Chicken Tzatziki Rice Bowls}

We’re settling back into our school year routine and, I must say, it feels pretty good! This week’s Sunday supper was one I’ve had on my desk all summer – Chicken Tzatziki Rice Bowls from Half Baked Harvest.

The flavors were just wonderful in this dish, although there were a number of ingredients and steps. Just as Honey went to fire up the grill a thunderstorm rolled in so we ended up baking both the chicken and the peppers in the oven. I imagine it would have been even more delicious coming off the Big Green Egg! We pretty much gobbled up the entire meal in one fell swoop. Leftovers don’t happen around here too often anymore. Have y’all seen my boys?! :-)

  1. We have a version of this weekly and it gets a lot easier when you use a rotisserie chicken and jasmine 90-second rice topped with tomatoes, feta, and tzatziki : )
