Coming off of fall break, our Sunday Supper came from the freezer. But I did manage to make one of our favorite desserts – chocolate peanut butter bars. This is a tried and true recipe from my beloved Cherokee Entertains cookbook that feels like fall to me.
Chocolate Peanut Butter Bars aka Homemade Reese’s Cups
You’ll need:
- 1.5 cups graham cracker crumbs
- 1 cup butter, melted, divided
- 1 16-oz box confectioners sugar
- 1.5 cups peanut butter
- 6-oz semi sweet chocolate chips
Mix together crumbs, 3/4 cup melted butter, sugar and peanut butter. Line a 13×9″ pan with waxed paper or parchment. Pat mixture firmly into lined pan, getting it as even as possible. Watch the edges!
Melt chocolate chips and remaining 1/4 cup butter over low heat. Spread evenly over peanut butter mixture. Since it is Valentine’s, I also topped mine with Dove dark chocolate hearts where I would later cut into bars.
Cool in fridge. When ready to cut, lift out of pan by waxed paper.
It’s back to Halloween decorating for me!
