Tonight we are enjoying Marme’s delicious beef stew. It takes a good amount of prep time with all the chopping, but once that is complete it cooks the rest of the day in the crock pot. The house smells absolutely amazing! This recipe serves a whole crew – Mother makes it feed the ten of us. My boys call her Mimi and Sister’s kids call her Lala, hence the name of the recipe. Is there anything more precious than your mother’s recipe in her handwriting? I don’t think so!
Mimi / Lala’s Beef Stew

- 2 boxes beef or chicken stock
- 3lb rump roast, cubed
- 4 baking potatoes, cubed
- 4 pieces celery, chopped
- 2 onions, chpped
- 3 cloves garlic, chopped
- 1 regular sized can petite chopped tomatoes
- 4 carrots, sliced thin
- 2 packets McCormick’s beef stew seasoning
Brown stew meat in olive oil, salt and pepper.
Put meat in crock pot, then add everything else. Stir.
Cook on high 4-5 hours, then turn to low until ready to eat.
John and I are waiting on Whit and Honey to arrive home from their ski trip before diving in! It’s soooo hard to wait!
