When I studied abroad at Oxford in college, I became absolutely obsessed with a street-side jacket potato stand. It was my go-to treat and something I continued to make for myself for decades later. Well, Whit and I have been positively obsessed with Poppy_Cooks on Instagram. Both her recipes and her accent keep us rapt with attention. She has a recent series called Only Jacket Potatoes and every.single.one looks scrumptious. We agreed to make them all but had to do the hard work to pick the first one… we landed on her “garlic star-crossed potato with bacon”.

We substituted the type of potato and bacon we could find here in Georgia, and Whit did all the measurement conversions. Our potatoes were rich and decadent and absolutely divine. Honey and John loved them too!
