My friend Stephanie shared her rave review on this dinner and when I saw it was a Half Baked Harvest recipe I was all in! I’ve loved most everything I’ve tried from her site and this was no exception. The fact that it bakes in one pan (plus a small pot) was an added bonus. It’s perfect for a school night and to feed a crowd. (Or have leftovers in case) The chicken was juicy and tender and the rice perfect!

I love hot honey on cheese, but not on chicken so I didn’t add the hot sauce to the sauce, and halved the cayenne pepper. It was perfect for us. I also did two full zucchinis and wish I’d done a third.
My other “chef note” is that when I buy a can of chipotle peppers my recipes usually only require 2. I freeze the rest in tiny bags of 2 pepper each so that they are recipe ready. The thaw out in a flash.
This one is headed to the rotation. I can’t wait to make it for John!
