School Night Supper {Chicken Wraps}

One of my very favorite kinds of meals is the kind where you open the fridge, see what needs to be used, and turn it into something satisfying without a lot of planning. I mean, who doesn’t love that?!

Enter Ivy Odom’s No-Recipe-Needed Chicken Wraps. When I read through her ideas, I was immediately inspired. The concept is simple. Start with cooked chicken, gather whatever you have on hand, set everything out, and let everyone build their own.

Since it is just the three of us at home right now, we had plenty of leftover chicken from Ivy’s Sunday Roasted Chicken to turn into an easy weeknight dinner. A rotisserie chicken would work beautifully too.

Ivy Odom’s My Southern Kitchen 

Here’s what we had on hand:

  • Leftover cooked chicken, shredded
  • Naan bread
  • Sliced tomato
  • Lettuce leaves
  • Hummus
  • Tzatziki sauce
  • Feta
  • Pickled onions (homemade earlier in the week, recipe in My Southern Kitchen)

Everyone piled on their favorites, wrapped things up, and dinner was served. It was so, so good and absolutely something we will make again and again.

I thought I would be able to stretch the chicken to just this second meal, but we ended up with enough left to make a bowl for Whit’s lunch the next day and a lunch for me as well. The only downside? Whit has now informed me he would like a chicken bowl in his lunch every single day. Creating monsters since 2005… one good meal at a time.
