Coming off the flu, my 50th birthday celebrations and an extended family trip to Walt Disney World last week, it has been a minute since I have made a proper meal at home. (Are you tired of hearing about how I had the flu yet? Because whooooole family is. HA!) And if I am honest, I was starting to feel it. I love my family by feeding them, and when life gets busy and that falls to the wayside, I miss it. So yesterday, I took a little break from work catch-up and ran to Publix for all the festive things.
Now, I did not have the time (or the energy, if we are being honest) to pull out the full St. Patrick’s Day setup. No cute table, no digging through storage bins for every last shamrock. But I did have time to make sure they felt loved and to give a little nod to the Irish.
I threw a corned beef in the crockpot with a bag of potatoes, a bag of carrots and a couple of onions, and let it do its thing all afternoon.
When Whit walked in from school and said, “It smells amazing in here,” I just smiled from ear to ear. That right there is the whole point.
A few hours later, the three of us sat down to a simple, hearty dinner, and it felt so good to be back in that rhythm.

I thought about making the crème de menthe brownies I usually do for St. Patrick’s Day, but time got the best of me. Instead, a box of festive Krispy Kremes stepped in and did the job just fine.


And honestly… sometimes I pull out all the stops, and sometimes it is just a Tuesday night meal at home.
Both count.
