Sunday Supper {Pizza Salad}

My friend Leigh Ann and I share a love of so many of the same things: all things Southern, great food, dance, Disney and family. So when she sends me a recipe and tells me I need to make it, I listen. Especially when said recipe includes Garlic Expressions.

LA knows that Garlic Expressions is my favorite salad dressing ever, so when she sent me this recipe for Pizza Salad, I didn’t delay in getting it on our table. It sounded like something we would love, and needless to say, we devoured it.

This is such a fun salad because it really does have all those flavors you love on a pizza, just piled into a big bowl of crisp iceberg lettuce. Between the provolone, sun dried tomatoes, pepperoncini and herbs, there is plenty going on, and the creamy dressing brings everything together.

I happened to have some pepperoni in the refrigerator, so I sliced a handful of those in half and tossed them in too. I’m not sure a salad called Pizza Salad could possibly object to the addition of pepperoni.

It was easy, delicious and definitely one we’ll make again. I also think it would be a great one to take to a cookout or serve alongside grilled chicken, burgers or, for that matter, actual pizza.

Pizza Salad

Ingredients

  • 1 head iceberg lettuce, shredded or torn
  • 1 medium red onion, thinly sliced
  • 1 handful fresh chives, diced
  • 8 slices provolone cheese, diced (my package came with 10, so naturally I used them all)
  • 1/2 cup sun-dried tomatoes, chopped
  • 6 to 8 pepperoncini, thinly sliced
  • 1 tablespoon Italian herbs
  • 1/2 cup Garlic Expressions salad dressing
  • 1 tablespoon mayonnaise
  • 1/2 cup Parmesan cheese
  • Salt and pepper to taste
  • A handful of pepperoni slices, halved, optional

Mix the mayonnaise and Garlic Expressions together until well combined. Add the lettuce, onion, chives, provolone, sun-dried tomatoes, pepperoncini, Italian herbs and pepperoni, if using, to a large bowl and toss everything together. When you’re ready to serve, drizzle the dressing over the salad, add the Parmesan and toss well. Season with salt and pepper to taste.
