Sunday Supper {Easy Pasta e Fagioli}

There is something about a rainy, dreary weekend that makes me want to put a big pot of soup on the stove and stay home. And with the nasty weather we’ve had, comfort food was definitely on the menu this weekend. This week’s Sunday Supper was a new-to-us recipe for (Not Your Nonna’s) Easy Pasta e Fagioli, and it was a winner! You can find this gem in Cortney LaCorte’s (aka Cheese Gal) new cookbook, Oversharing: Anytime Snacks, Everyday Dinners, and Cooking for Company.

I’ve always loved a good bowl of pasta e fagioli, but this version has a few fun twists that caught my attention. Instead of traditional pasta, it uses cheese tortellini, along with cannellini beans, carrots, fennel, a little salami and plenty of parmesan. The store-bought marinara is a clever shortcut, too. It was fairly easy to put together and absolutely delicious. The broth was rich and flavorful, the tortellini made it extra hearty and the whole thing was just the kind of cozy meal we were craving.

And y’all, it made a TON. The recipe says it serves six to eight, and I believe it! We had plenty for dinner and enough left over for another meal, which is always a win in my book. I love cooking once and having dinner already taken care of for another night.

This one is definitely worth adding to your fall soup rotation. I can already see us making it again when the temperatures finally start to cool down.

On a much more serious note, my heart goes out to everyone affected by the hurricane. While we’ve had some unpleasant weather here, I know so many families and communities are facing much more difficult circumstances. Keeping everyone dealing with damage, loss and uncertainty in my thoughts and prayers.

And before I go, a little reminder to enter my giveaway if you haven’t already! I don’t want anyone to miss out.

Wishing y’all a safe and peaceful Sunday evening. I hope there’s something warm and delicious on your supper table tonight!
