Party Popcorn

The PCP helped me whip up a batch of red and blue flavored popcorn for our Fourth of July sweets and treats table.  It was easy, festive and pretty delish to boot.  
Using the recipe below, we mixed up one batch of red (cherry) and one batch of blue (berry).
Party Popcorn
8 cups popped popcorn
1 cup party peanuts (or cocktail peanuts)
1/4 c butter
3 T light corn syrup
1/2 c sugar
1 package (small box) Jello in whatever color or flavor your heart desires
Preheat oven to 300.  Line large baking pan with parchment paper.  
Toss popcorn and peanuts in large bowl and set aside.
In a small saucepan, cook butter and syrup on low heat until melted.  
Add sugar and jello and stir until dissolved.  Bring to boil on med heat.  Reduce to low heat and simmer 5 minutes.  
Pour immediately over popcorn mixture and toss to coat well. Spread evenly into pan.
Bake 10 minutes.
Cool, remove from pan and break into small pieces.
Note: After sitting outside in the humidity our popcorn got soggy.  Keep it in an air tight container until you go to serve it.
I envision many, many more pans full of party popcorn in our future…
