It feels like fall, y’all! We’ve been having gorgeous crisp mornings and cool evenings and I’m so here for it! It hasn’t quiiiiite been soup weather, but that didn’t slow my roll. This week’s Sunday Supper is all about comfort foods and two long time, quintessentially Southern, favorites: Chicken & Dumplings and Coca-Cola Cake.
Chicken & Dumplings
This is a delicious recipe and we enjoy it often. Make sure you have a full 4 cups of shredded chicken (minimum) for the right biscuit ratio. You will also need a HUGE pot. She says 6-7 quart but 6 is not even big enough.
Coca-Cola Cake
I have made this cake for over twenty years and used this exact recipe from an old Coca-Cola cookbook. It is perfect for a cookout or pot luck because you make it in a baking pan and simply spread the icing on top. It’s easy to transport, cut and serve. Oh, and it’s delicious!
We have a friend in town this weekend and cannot wait to simply swim, enjoy low-key burgers and catch up. I hope your family is enjoying a nice long weekend!
