I was talking to my friend DG one night as I had just started to put together supper. I told her I had a bunch of carrots on the verge of going bad and she sent me this recipe. Oh my – it is delicious! So much so, that we’ve already made it again

Glazed Carrots
I had one pound of carrots for 3 of us and halved the recipe.
- 2 lbs carrots, peeled and cut to 1.5″ length and .5″ thick
- 3 T olive oil
- 1/4 c honey
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp cnnamon
- 1/2 tsp cumin
- 1 tsp salt
- 1/4 tsp pepper
- Preheat oven to 425
- Dump everything but carrots into large zip top bag
- Add chopped carrots to bag and toss to coat
- Pour out onto parchment lined sheet pan, squeezing out any remaining honey mixture on top
- Roast in oven for 25 minutes, tossing once half way through
- Remove from oven and toss again
- Set over to broil and cook for 3-5 more minutes, watching closely to ensure they don’t burn.
I will get a post up soon about our sous vide system. We’ve done steaks, pork chops, cheesesteaks and chicken (pictured). Everything has been delicious!

Amanda,
My first grandson celebrates his 13th birthday later this month. I have enjoyed reading and seeing how you celebrate your boys. I really like your tradition of giving a “forever gift”. I think this would be a good year to begin this for my grandson. Would you share your gift ideas for this age?
Thank you,
Karen
