For the past three and a half years, this chili lime chicken taco recipe has been a staple in our family’s dinner rotation. It’s bright, zesty, and bursting with flavor – plus it makes enough to stretch into leftovers, which is always a win in my book.
Just last month, I found myself craving our trusty tacos but realized at the last minute that I was out of the peppers that are pretty critical to the flavor. So, I did what any taco-loving, dinner-in-a-pinch cook would do …. I turned to the internet and the always promising Pioneer Woman to see how she feeds her crew.
Much to my delight, her chicken taco recipe was not only quick and easy but also called for ingredients I already had on hand. The result was just as delicious, with a slightly different twist that we all loved.
(I swear I took a photo, but cannot seem to locate it. For the sake of this post, I took this one from the Pioneer Woman page. I shredded my chicken, rather than cubing it.)

So now, I have two go-to chicken taco recipes in my back pocket. Both are simple, flavorful, and perfect for keeping Taco Tuesday feeling fresh and fun. I mean, I can’t imagine a world where I can’t use one more taco recipe. :-)
