Sunday Supper {Chicken Pot Pie Soup}

I love chicken pot pie. Like love love love love love it. It’s the ultimate comfort food for me. I’ve been making the same recipe for 25 years now – one that came from one of my best friend’s mothers – and it’s been my go-to whenever someone around here needs a little love. I’ve even been known to Instacart the ingredients and start this labor of love way too late in the evening.

Because of that deep loyalty, I’ve put off trying Ina Garten’s Chicken Pot Pie Soup for years. I just didn’t think it could possibly compare.

Well… turns out, it’s exceptionally delicious! It’s not a replacement for my traditional pot pie, but it’s a cozy, comforting meal that I know will make many repeat appearances at our table over the years.

I cooked and shredded the chicken earlier in the day and went ahead and chopped all the veggies. With that behind me, the soup came together quickly at supper time. I used mini cookie cutters to cut out the puff pastry croutons in fall pumpkins and leaves. The end result was hearty, flavorful, and every bit as comforting as you’d expect from Ina. Plus, it made enough for us all to have a second round the next night. Y’all know that’s my fave. :-)
