School Night Supper {Ultimate Tuna Melts}

I’m back today with another Ina Garten recipe: Ultimate Tuna Melts! This is one I’ve had flagged in my cookbook for ages but never quite gotten around to making. The main reason? Whit. The boy won’t touch a tuna melt with a ten-foot pole. He’ll eat his fish raw at a sushi bar all day long but certainly not from a can. Ha!

With just two of us eating, this ended up being such a quick and easy week night dinner, and the best part was having leftovers for lunch the next day.

A couple of highlights:

  • I used my homemade sourdough for the bread, which made it extra special.
  • I couldn’t find microgreens at my store, so I used arugula on mine. It was amazing! Honey skipped the greens all together.
  • Ina calls for Swiss cheese, which I never would have thought to pair with tuna, but it was perfect!
  • My only note for next time, scribbled into the margins of my cookbook: use a little less mayo.

As I made these, I couldn’t help but think about Whit leaving the nest in just a couple of years. It’s so hard to imagine! The only silver lining I’ve come up with so far? When he’s off at college, we’ll finally get to eat all the seafood we want without complaints. Small victories, right?
