On a chilly winter night, there are few things more comforting than carbs and cheese and Ina Garten’s Penne with Five Cheeses absolutely delivers.

This dish has been on my “make soon” list for ages, and I finally pulled the trigger when the temperatures dropped and everyone was craving something hearty and familiar. The combination of cheeses is pure comfort food magic: gorgonzola, fontina, mozzarella, Romano and ricotta. It was rich, but not heavy, and the kind of supper you just can’t wait to tuck into.

What I especially loved is how quickly this comes together. Everyone at the table loved it. Plates were clean, seconds were taken and there were zero complaints. And bonus: I have plenty of cheese left for round two this week!
