Sunday Supper {Chicken Poppy Seed Casserole}

There’s something extra special about a cookbook that comes with a memory attached to it.

My sweet friend L gifted me the VeryVera cookbook for my birthday after I absolutely fell in love with the strawberry cake she made from it for my surprise mahjong celebration. It was one of those desserts you don’t forget, and now every time I flip through the pages, I think of that night.

If you’re not familiar, Vera Stewart, the heart behind VeryVera, is known for her Southern hospitality, approachable recipes, and dishes that feel like they were made to be shared around a table full of people you love. It’s quickly become a favorite in my kitchen over the past few weeks. I’ve found her recipes to be approachable, delicious and built around ingredients you probably already have on hand or at least know where to find in your neighborhood grocery store.

For this Sunday Supper, I wanted to feature her Chicken Poppy Seed Casserole.

A true potluck classic, this dish has been around for years and for good reason. It’s creamy, comforting, reheats beautifully and is satisfying in any season. The kind of recipe that feels just as at home on a busy weeknight as it does on a table surrounded by friends.

My only tweak? I would scale back just a bit on the noodles next time. We all agreed that letting the sauce and chicken shine a little more made it even better. I should also note that I had homemade cream of chicken soup on hand and used that in lieu of the can.

Another reason to love this recipe… it’s perfect for planning ahead. You can assemble the casserole, freeze it before baking, then simply thaw it overnight in the refrigerator and bake when you’re ready.
